Determine how food should be presented using the BEO and create decorative food displays. Prepare special meals or substitute items. Assist with Banquet plate-ups. Communicate any assistance needed during busy periods to the Chef. Ensure proper portion, arrangement, and food garnish. Monitor the quality and quantity of food that is prepared and the portions that are served. Prepare proper plate and platter presentations for banquets. Set up and operate action stations for banquet or buffet. Carve buffet meats as requested by guests. Support banquet and buffet by ensuring adequate stock of all items. Operate ovens, stoves, grills, microwaves, and fryers to prepare foods. Prepare ingredients for cooking, including portioning, chopping, and storing food. Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist. Prepare cold foods.
Serve food courses and alcoholic beverages to guests. Set tables according to type of event and service standards. Answer questions on menu selections. Communicate with the kitchen regarding menu questions, the length of wait, re-cook orders, and product availability. Handle inappropriate guest behavior by following Marriott International standard operating procedures for Inappropriate conduct for guests and therapists, leading up to and including stopping a treatment or service and informing supervisor/manager. Maintain current skills and licensure in service area as per regional requirements.
Functions as the business leader of the property’s sales department for properties with bookings exceeding parameters of the Group Sales teams within the Sales Office. Provides day to day leadership to a small team of on-property sales associates and pulls through a number of above-property sales channels (e.g., Market Sales, Sales Office) in order to achieve hotel sales objectives, booking goals and property revenues. Develops strategic working relationships with leaders of these sales channels in order to proactively position and drive sales to the property. Interfaces with the Regional Marketing & eCommerce team to review collateral and execute the property’s marketing plan as well as pull through regional and national promotions. Develops and implements property–wide strategies that deliver products and services to meet or exceed the needs and expectations of the brand’s target customer profile and property associates and provides a return on investment to the owner and Marriott International.

Sell a room/accommodation to guests without reservations based on availability. Ensure rates match market codes and that any exceptions are documented.
