About This Job

Summary of Position

The Director of Restaurants is responsible for overseeing all front-of-the-house food and beverage operations throughout the resort to include: Thistle Pub and Grille, Wild Tomato, Vista Lounge, Clipper cafeteria, Plaza Grille, and the golf course beverage carts. The primary responsibility of this position is to ensure that all resort guests have a high quality food and beverage experience.

Job Duties & Responsibilites

  • Provides consistently high levels of guest service and atmosphere commensurate with the expectations for a 4-Diamond resort as measured by Guest Research, Inc.  (As a guideline, the restaurant should equal strong 3-Star/Diamond Mobil and AAA ratings.)
  • Works closely with the Executive Chef and Director in helping to create a motivational atmosphere and cohesive Food and Beverage team.  
  • Responsible for developing and implementing all necessary Standard Operating Procedures, Training Manuals, and F&B Job Descriptions for front-of-the-house operations.
  • Responsible for selection, training, supervising and success of all front-of-the-house, supervisors and other staff within the Food & Beverage department.
  • Responsible for scheduling all front-of-the-house supervisors to insure that all outlets are properly staffed.


  • Minimum of 7+ years of prior food and beverage supervision experience is required.
  • Experience in fine dining as well as family dining establishments.
  • Experience managing multiple locations and a staff of up to 70 people is desirable.
  • Must have a good working knowledge of lounge operations including the purchase, sale, pricing and inventory control of beer, wine, and other alcoholic beverages.
  • Must have experience with Point of Sale systems, liquor laws, fine dining & training/managing staff.


  • Bachelor’s degree in Hotel/Restaurant Management or Business is preferred.
  • A combination of work experience and progressive leadership in hospitality food and beverage operations desired.

Compensation: $52,000, Depending on Experience
