About This Job

JOB DESCRIPTION

Summary/Objective as a Sous Chef your goal is to be committed to providing our guest with exceptional service, quality, and value. Cleanliness of the food service area is essential, as well as maintaining the quality and freshness of the food. The Sous Chef assists with training, assigning duties and supervision of the kitchen staff during the preparation, cooking and garnishment of food items. The Sous Chef assists in the development of new menu offerings, banquet menus and reviews all banquet event orders to ensure all menu items and set-ups are prepared to company standards. The ideal candidate must be innovative, detail-oriented, and a multi-tasker with good oral and written communication and interpersonal relationship skills.

Essential Functions:

  • Daily and weekly purchasing and end of month inventories
  • Maintenance of cost controls and overall profitability
  • Maintain quality and proper rotation of products
  • Preparation and production of all meals, food quality and presentation according to assignment
  • Food preparation, including prep work leading up to meal service & events. As well as all necessary cooking on the day-of and during Event
  • Creation and implementation of menu selections for special banquet themes and events based on current food trends and regional tastes in partnership with the Production Chef and Corporate Chef
  • Operation of the kitchen, while ensuring the highest standards and quality of produce is being consistently delivered
  • Compliance with all safety and sanitation standards and regulations
  • Compliance with federal, provincial, local and company health, safety, sanitation and alcohol awareness standards
  • Maintenance of sanitary food preparation and storage areas at all times in accordance with provincial requirements and codes
  • Maintenance of strict health and safety and food hygiene standards
  • Cleaning and care of equipment
  • Other duties as directed.

Work Environment This job operates in a kitchen environment. This role routinely uses stoves, ovens, grills, machines, and Knives. Associates in this role are frequently exposed to hot water, potentially slippery floors, hot stoves and fire.

Physical Demands The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job.

The employee is occasionally required to sit; climb or balance; and stoop or kneel. The employee must frequently lift and/or move objects up to 30 pounds and occasionally lift and/or move objects up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.

Position Type/Expected Hours of Work This is a full-time position. Days and hours of work vary based on need. Frequent evening, weekend and holiday work is required.
