REPORTS TO:  Executive Chef

POSITION SUMMARY:


Accurately and efficiently cooks meats, seafood, vegetables, soups, and other hot and cold food items.  Properly prepares and portions all food products prior to cooking.  All plate presentations of hot and cold food are followed to specifications from using proper plate for item, placement, and garnishes. Is responsible for all rotation, storage, and labeling of food products.  Keeps a clean station at all times.


DUTIES AND RESPONSIBILITIES:

  • Can properly open and close according to shift requirements
  • Start of each shift checks or makes proper prep list for the line, and service
  • Properly preps and portions food to all specifications
  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service
  • Checks prep list, or BEO’s for any special functions for the day, or future events, and completes any task that may need to be done
  • Prepares product items for service using proper method of grilling, broiling, frying, sautéing, and all other methods to chefs specifications
  • Assumes 100% responsibilities for quality and presentation of products served
  • Communicates with management, service staff, and kitchen staff
  • Continuous communication with line cook staff during service
  • Use and understands POS ticket system
  • Understands and follows standards, and policy of the hotel and kitchen requirements
  • Understands and certified in serve safe (will train if not certified)
  • Maintains a clean, and sanitary work area including tables, shelves, walls, kitchen cooking equipment, and refrigerating equipment inside as well as outside
  • Maintains clean hands by washing thoroughly, and follows use of gloves proper guidelines
  • Washes dishes and pots when needed
  • Promptly reports equipment and food quality problems to management
  • Performs any special duties daily, weekly, or monthly
  • Performs any given task assigned by the chef or management as requested or needed
  • Attends all meetings required for restaurant, kitchen, and hotel that pertains to the position


PREREQUISITES:


Education:

  • GED or High School diploma


 Qualifications:

  • Possess a positive attitude and work well with other team members
  • Possess a TEAM WORK attitude
  • Must be able to communicate clearly with managers, and other team members throughout the kitchen, dining room, and hotel
  • Be able to reach, bend, stoop, and frequently lift up to 50lbs
  • Be able to work in a standing position for long periods of time
  • Be willing to follow direction and ask questions for clarification if needed
  • Be able to work in a fast paced kitchen environment
  • Be able to work in hot, wet, humid, and loud environment for extended periods of time


Experience: 

  •   Minimum of 5 years in kitchen preparation, and cooking
  • 2 years in fine dining cooking. (a plus)
