Job overview

  • Assist the Kitchen Management team in the preparation of all cold food items including, but not limited to, salads, cold appetizers, deli trays, box lunches, other similar menu selections for the Food and Beverage outlets.

The ideal candidate will: 

  • Meet and exceed customer expectations by ensuring the department provides the highest standard of customer service and teamwork.
  • Responsible to supply assigned workstation with all needed products and culinary equipment for prompt production.
  • Makes sandwiches, salads, and fruit trays on a daily basis for guests according to the pars and recipes provided by chefs (manager) per banquet event order (BEO).
  • Stay updated with BEO changes including serving time, guest counts, and other similar changes that are made by the Catering or Sales team.
  • Assist with salad bar and line preparation including cleaning, trimming and slicing food and properly labeling and storing it in the appropriate place for use.
  • Stores all food in refrigerated boxes including covers, labels and dates, using the proper containers to protect against waste and spoilage.
  • Maintains area in a clean condition at all times.
  • Coordinate timing of all foods prepared for serving and/or delivery.
  • Ensure quality of food prepared and served to guests.
  • Perform general/routine cleaning tasks using standard hotel cleaning products as assigned by your supervisor to adhere to health standards.
  • Keep floors dry and clean to avoid slip/fall accidents.
  • Perform other duties as requested, such as moving supplies and equipment, cleaning up spills, etc., to ensure safe working environment.
  • Assist with all phases of inventory and understands par levels of daily foods prepared.
  • Knowledge of rotation of all foods prepared.
  • Other duties as assigned by Hotel management.

Standards and Procedures: 

  • Regular attendance in conformance with the standards, which may be established by Radisson from time to time, is essential to the successful performance of this position.
  • Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel.
  • Maintain a neat, clean and well-groomed appearance in accordance with Company Standards (specific written standards available).

Job Knowledge, Skill, And Abilities:

  • The individual must possess the following knowledge, skills, and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodations, using some other combination of skills and abilities.
  • Must have basic knowledge of the fundamentals of cooking.
  • Must have basic knowledge of accepted standards of sanitation.
  • Must have knowledge of operating all kitchen equipment, i.e., stoves, ovens, broilers, slicers, steamers, kettles, etc.
  • Basic mathematical skills necessary to understand recipes, measurements, and portion sizes.
  • Ability to read and write the English language in order to read recipes and communicate with other employees.
  • Sufficient manual dexterity of hand in order to use all kitchen equipment, i.e., knives, spoons, spatulas, tong, slicers, etc.
  • Ability to grasp, lift and/or carry, or otherwise, move (rotate) goods weighing a maximum of 200 lbs. on a continuous schedule.
  • Ability to perform duties in confined spaces.
  • Ability to perform duties within extreme temperature ranges. 

Working Environment:

  • Inside with protection from weather but not necessarily changes in temperature.
  • Work area may be confined. 
  • Temperatures could be hot enough to cause discomfort to the human body. 
  • Floors may be wet and slippery for walking.
  • Physical activities include walking, talking, standing, hearing, seeing, touching, fingering, feeling, grasping, bending, stooping, crouching, kneeling, lifting, carrying.
  • Work area has considerable noise from equipment, voices, etc.  Frequent interruptions are possible. 
  • Must be able to change activities frequently. 

Education:

  • Any combination of education, training or experience that provides the required knowledge, skills and abilities.  
  • High school education preferred.

Experience:

  • Basic cooking or pastry knowledge preferred.
