About This Job

WHITETAIL CHEF SUMMARY:  Our Exclusive Club Chef is responsible for excellence in food preparation and production of all Club outlets; primarily Club House, Fish and Swim and Golf Grill.  A strong focus is placed on the preparation of high quality food, while keeping in mind food costing. Our successful Club Chef leads by example, providing the culinary staff with effective, on-going training and mentorship to ensure that members receive an experience that is reflective of our Private Club.


  • Building and fostering a cohesive team unit with a strong sense of culinary pride. 
  • Outlet food preparation, club banquets, off-site functions as well as in-home member functions; all while ensuring superior quality, consistency and brand identity.
  • Managing the daily operations of the kitchen, including procurement, scheduling, meal preparation and service.
  • Controlling food inventory, ordering, requisitioning, transfers and cost. 
  • Controlling labor costs and adjusting staffing according to seasonal business fluctuations.
  • Establishing and representing the culinary identity of the Club via menus, specials, promotions, events etc.
  • Accommodating member requests and challenges in a friendly and professional manner.
  • Exceeding culinary expectations for all members and their guests.
  • Assisting in recruiting, hiring and on-boarding procedures. 
  • Assisting in creating and implementing menus, events, systems and procedures.      


SKILLS AND QUALIFICATIONS:    

  • Formal, culinary arts training and on-going evaluation/knowledge of current culinary trends
  • Minimum 5 years’ experience in Sous Chef, Chef de Cuisine or Executive Chef position
  • A thorough knowledge of food preparation and presentation
  • Experience working in a Club environment
  • Experience with purchasing and maintaining inventory levels
  • Strong positive and proactive communication and organizational skills
  • A hands-on, lead-from-the-front style of leadership that creates and fosters a strong sense of ‘team’
  • Ability to multi-task and work professionally under deadlines in a stressful environment
  • Thorough knowledge of all Microsoft applications and a general computer literacy
  • A sense of maturity and leadership
  • The ability to functionally multitask with speed and grace
  • A strong understanding of both front and back of the house operations


ESSENTIAL JOB FUNCTIONS:

  • Manage the daily production, preparation and presentation of all food for the Club’s restaurant(s) to ensure a high quality, consistent product that conforms to all brand standards
  • Manage employee functions in the production and preparation areas of the kitchen in order to attract, retain and motivate employees while providing a safe work environment
  • Develop, empower, coach and counsel, recommend and conduct performance and salary reviews, provide open communication, recommend discipline and termination, when and where needed
  • Work to develop, maintain and strengthen the concept of ‘team’ within the Culinary and Food and Beverage structure
  • Assist Talent Acquisition Manager with recruitment, hiring and onboarding procedures
  • Schedule and manage the maintenance/sanitation of the kitchen, equipment and related areas to ensure a healthy and safe work environment which meets/exceeds federal, state, and corporate standards and regulations
  • Monitor, analyze and control all labor and food costs; prepare the appropriate reports, inventory counts, charts and schedules to ensure budgets are met/exceeded while quality is maintained/constantly improved
  • Assist in planning and development of menus and recipes, ensure the correct and consistent preparation and presentation for all food items prepared through training and demonstration, utilize creative menu planning to minimize waste
  • Maintain control systems assuring quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications and foster awareness among the team of the importance of food preparation and quality
  • Communicate with employees and other managers to ensure operational needs are met, coordinate menu tastings and pre-meal meetings to train and educate staff on food taste and preparation methods, attend regular operational meetings to ensure effective coordination and cooperation between departments; interact directly with members and their guests to assure satisfaction
  • Promote a safe working environment to minimize liabilities and related expenses
  • Perform special projects and other responsibilities as assigned.
