Job Description

Provide leadership and management for the Food & Beverage Department, including all Culinary, Restaurant, Beverage, Bar, Catering and Banquet Operations. Direct and organize the activities of the Food and Beverage Department to maintain high standards of food and beverage quality, service and merchandising, to maximize profits.

  Essential Functions
  • Plan and direct the functions of the administration and planning of the Food and Beverage Department to meet the daily needs of the operations.
  • Describe, assign and delegate responsibility and authority for the operation of the various food and beverage sub-departments (eg: IRD, restaurant, banquet rooms, kitchen, stewards, etc)
  • Ensure full compliance with all policies and procedures of Brand and government entities, including health and fire regulations regarding food preparation and serving.
  • Develop, implement and monitor schedules for the operation of the F&B department to achieve a profitable result.
  • Ensure consistent presentation of all foods and beverages.
  • Implement effective control of food, beverage and labor costs among all sub-departments.
  • Assist GM and DOSM in establishing and achieving predetermined profit objectives and desired standards of quality food, service, cleanliness, merchandising and promotion.
  • Regularly review and evaluate the customer satisfaction of menus, daily specials, banquet services, etc. Evaluate past popularity of menu options; work with Executive Chef to develop new menus based on trends, while meeting Brand standards.
  • Develop operating tools, or implement and manage Brand operating tools (eg: budgeting, forecasting purchase specifications, portion specifications, menu abstracts, food production control, etc).
  • Assure that station guides are up-to-date, in good condition and being used.
  • Monitor associate and patron activities to ensure liquor regulations are obeyed.
  • Able to step into any f&b staff position to carry out the tasks. Able to lead by example.
Administrative
  • Establish and maintain quarterly and annual revenue and cost projections, which will be reviewed and revised with GM.
  • Develop, implement and monitor schedules for the operation, to achieve a profitable result.
  • Review invoices for products and services related to the department; analyze variances and take corrective action.
  • Arrange for equipment maintenance and repairs; coordinate a variety of services such as waste removal and pest control.
  • Monitor budgets and payroll records, and review financial transactions to ensure that expenditures are authorized and budgeted.
  • Maintain paper work relative to production chart, high cost control charts, BEO's and special orders.
Associate Relations
  • Create and nurture a hotel environment that emphasizes motivation, empowerment, teamwork and a passion for providing service.

  • Continuously evaluate the performance and encourage improvement of the associates in the food & beverage department.

  • Plan and administer a training program within the department that will develop associates at all levels.

  • Be readily available & approachable for all team members.

  • Assist supervisors in understanding team members’ ever changing needs and expectations, and exceed them.

  • Take proactive approaches when dealing with associate concerns.

  • Extend professionalism and courtesy to team members at all times.

  • Celebrate and foster decisions that result in successes as well as failures.

Guest Relations
  • Seek alternative forms of advertising and promotion, to increase customer base, both internal and external customers, including but not limited to electronic marketing and communication (website, email, Facebook, etc).

  • Book live entertainment, when appropriate, to enhance the guest experience and increase revenues.

  • Be readily available/ approachable for all guests.

  • Take proactive approaches when dealing with guest concerns. Follow property specific second effort and recovery plan.

  • Ensure staffing levels allow team members to exceed guest needs.

  • Extend professionalism and courtesy to guests at all times.
 OTHER REQUIREMENTS

In addition to performance of the essential functions, this position may be required to perform a combination of supportive functions, determined by the GM:

  • The hotel operates 7 days a week, 24 hours a day. Schedules must accommodate fluctuating business demands and associates may be asked to work shifts other than those they prefer or normally work.
  • Carry out all reasonable requests by leadership team.

  • Comply with department uniform and appearance standards.

  • Participate in Manager on Duty coverage program requiring weekend stay-over.
