A Head Chef is responsible for managing all aspects of the kitchen to deliver an excellent Guest and Member experience while seeking customer feedback, training staff, controlling costs, and covering all business needs



What will I be doing?

As a Head Chef, you are responsible for managing all aspects of the kitchen to deliver an excellent Guest and Team Member experience. A Head Chef will also be required to ensure that all operational, quality, and administrative functions are carried out properly.


To provide the F&B Team (Service & Kitchen)
with the leadership and culinary expertise that optimizes F&B profitability
whilst delivering great F&B customer experiences and maintaining a high
level of engagement.


Specifically, you will be responsible for performing the following tasks to the highest standards:

          Duties & Key
          Responsibilities

          • Execute duties as assigned by the General
            Manager.
          • Prepare the F&B business plan to support/deliver
            budgeted growth across all F&B income streams with input from F&B
            Service Leadership Team
          • Ensure that menu, bar and restaurant
            pricing is market led, relevant and engineered to deliver optimal profit
          • Ensure a high standard of food quality and
            choice at all times
          • Regularly review F&B product/process
            impacts together with F&B Service Leadership Team and make changes as
            required
          • Put time and energy into areas that add
            value to the guest experience or profitability of the business (or both)
          • Schedule the F&B
            team to deliver optimal levels of productivity and maintain the purchasing
            cycle in line with forecasted activity
          • Ensure that effective food cost/waste
            management controls are in place, hygiene standards are met and all F&B
            labour costs are flexed according to levels of demand/activity
          • Interview, select, train, supervise, coach, and
            evaluate Kitchen team members
          • Approve hires of F&B team members and
            ensure they are effectively introduced to their roles, coached and developed by
            the F&B Service Leadership Team
          • Ensure that all F&B team members
            (Kitchen and Service) understand the purpose of their role and are equipped
            with the, knowledge, training and tools required to deliver great F&B guest
            experiences and high quality meal production
          • Ensure a safe, secure and stimulating
            environment is provided for team members in the kitchen, F&B service and
            other supporting areas, allowing everyone in the team to thrive.
          • Be a role model for others in regards to Hilton Garden Inn
            brand values and actively encourage cross departmental team work and
            appreciation for work well done in the whole F&B Team
          • Communicate regularly &effectively, both
            verbally and in writing, to provide clear direction to all F&B team members
            and maintain a high level of engagement and trust in the whole F&B team
          • Be very present in the operations and
            actively support the operations team through times of stress. Schedule yourself
            regularly in Kitchen Shifts and F&B Service Shifts. .


            Requirements

            • Catering experience in managerial capacity
            • Experience managing a kitchen and developing staff
            • Experience managing food costs
            • Excellent leadership, interpersonal and communication skills

            • Ability to work under pressure
            • Intermediate food hygiene qualification
            • Flexibility to respond to a range of different work situations

            It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

            • Previous kitchen experience in similar role
            • Passion for food
            • Knowledge of current food trends
            • Advance food hygiene qualification
            • High level of IT proficiency
