Multiple time James Beard nominee Top Chef John Tesar has partnered with Laguna Cliffs Marriott Resort and Spa to open his newest restaurant, Outer Reef. Outer Reef will be opening its doors Fall of 2019 and is positioned to be the premier restaurant in Orange County. We are looking for an experienced Ched de Cuisine to work side by side with Chef Tesar detailing the final touches for Outer Reef. This position will need to have an intricate understanding of all fine food preparation and presentation, personnel management, recruitment, service knowledge, and food handling/kitchen cleanliness requirements. Previous experience opening restaurants is a plus as is a culinary degree. If this exciting opportunity sounds like you, we want to hear from you!

Job Requirements

  • Customer service focused and oriented

  • Strong team building and morale building abilities
  • Ability to implement Company policies and procedures efficiently
  • Sound decision making and problem solving skills with the ability to resolve conflicts
  • Ability to adapt successfully in a fast-paced environment
  • Basic computer skills including the ability to browse the Internet, use email, and Microsoft Office applications
  • Minimum of 4 years kitchen management experience required
  • Understanding of profit and loss statements
  • Must be able to work an average of 50-60 hours per week
  • Previous restaurant openings strongly preferred
  • Culinary degree strongly preferred

Job Responsibilities:

  • Knowledge of basic business fundamentals including full understanding of P&L and COGS statements
  • Ensuring all productivity numbers, budgets, and sales are met
  • Build and motivate crew members by example, exemplifying the core values, passion, and culture of Laguna Cliffs
  • Applying financial tools and analyzing financial reports to identify trends
  • Ensure positive customer experiences
  • Lead, train, coach, and counsel team members
  • Resolve guest issues with Restaurant Manager effectively to ensure positive guest experience
  • Prepare appropriate weekly staff schedules based on projected business volume
  • Ensure high quality of food preparation and customer service consistent with Laguna Cliffs requirements and procedures
  • Ensure all operating activities follow company standards and procedures
  • Execution of food safety and restaurant safety standards and equipment maintenance guidelines
  • Ensure the safety of guests and team members
  • Develop daily specials
  • Ensure presentation and preparation of all food items is met or exceeded
