Position Summary

The Company operates 24 hours a day and 7 days a week, so operational demands require variations in shift days, starting and ending times, and hours worked in a week.

The Overnight Baker is responsible for preparing baked goods on the overnight shift in preparation for the next day's operation across five food & beverage outlets and banquet spaces. Maintain highest professional food quality and sanitation standards. Works efficiently in high-speed bustling culinary environment. *** This is an overnight shift beginning at 3am. Typically 5 days a week, 6 hours or more per day ***

Essential Functions

  • Prepare pastries according to recipes and chef direction.

  • Stock, maintain, and ensure proper storage and refrigeration of an adequate supply of all prepared product.

  • Assist Pastry Chef in developing new menu offerings.

  • Prepare daily requisitions for supplies and food items.

  • Practice food handling and storage procedures according to federal, state, local, and hotel regulations.

Qualifications

The Company may consider equivalent combination of acceptable education and experience providing the knowledge, skills and abilities cited below.

Education and Experience


  • High school diploma/GED

  • 1 year culinary or food service experience preferred

  • Pastry/bakery background experience required.

  • Culinary degree preferred

Skills and Abilities


  • Ability to interact positively with supervisor, management, coworkers, members, and the public to promote a team effort and maintain a positive and professional approach.

  • Ability to produce a high volume of work in a timely manner, which is accurate, complete, and of high quality.

  • Ability to work long hours, nights, weekends, and holidays.

  • Ability to operate, maintain, clean kitchen equipment. Ability to life/carry loads of up to 50lb.

Working Conditions & Physical Effort

While performing the duties of this job, the employee is regularly required to talk, hear, sit, and stand. While performing the essential functions of this job, the employee is usually indoors, in a semi-controlled environment, and experiences a moderate to high noise level in the work environment.
