EDUCATION:   College degree preferred, experience can be substituted for education.  Ability to speak, read, write and comprehend the English language at a level sufficient to communicate effectively with clients, members, guests and co-workers.

TRAINING & EXPERIENCE:  2 years experience as a full service restaurant manager or server of private club dining room manager; banquet and fine dining experience a plus.  Use of a Point of Sale (computer) system.

JOB KNOWLEDGE:  Working knowledge of dining room and beverage operations, including the use of appropriate equipment and the accompanying safety features, member relations, vendor relations, systems, employee relations, budgets and costs.

JOB SUMMARY:  Directs the daily operations of the Mansion Dining Room, Chartroom Lounge, Wheelhouse Café and Mariner’s Deck Bar maintaining exceptional member relations, the highest of quality standards (to include top service and overall cleanliness) and to maximize sales and profits.

PHYSICAL ABILITIES:  Must be able to work on feet, moving about at a quick pace for several hours at a time.  Must be able to lift, carry and move up to 35 pounds, to include furniture, glasses, dishes, ice, beer, wine, liquor – individually, on racks and/or trays, or by cases.

  3. Direct the effective and efficient operation of the Outlets
  4. Enforce high standards of appearance, cleanliness, graciousness and service among personnel.
  5. Greet members and guests by name whenever possible.
  6. Communicate frequently with the members and guests to insure their total satisfaction and to obtain their feedback, following up on observations, suggestions and any complaints.
  7. Supervise a la carte personnel (servers, dining room attendants, captains, hostesses and bartenders) with regard to recruitment, selection, orientation and training.
  8. Pre-shift educational/motivational meetings executed daily.
  9. Circulate constantly throughout the dining room during the principal hours of service coaching and directing, to maintain and increase quality of service.
  10. Count monthly inventories, china and glassware, use this information to impact the P&L daily.
  11. Oversee daily scheduling of a la carte staff – working to reduce labor costs.
  12. Maintain high sanitation and safety standards, by training and working with staff daily.
  13. Work directly with the Executive Chef to insure coordination and quality of the members’ experiences.
  14. Attend Food & Beverage meetings/BEO meetings weekly to review function sheets and to communicate any special needs.
  15. Staff performance evaluations done in a timely and consistent basis.  Adhere to all established company HR related practices.
  16. Ensure accuracy of payroll.
  17. Perform and follow up on any other duties as assigned by the Assistant General Manager or General Manager.
  18. Must be able to work a flexible schedule, to include weekends, holidays and split shifts.
  19. Hair must be clean and cut in a becoming style; management has final approval.
  20. Attend all required training, safety courses; attend office and departmental meetings.
  21. Report any safety hazards, follow up that hazard has been corrected, and assist with providing a safe work environment.
