JOB OVERVIEW:  The Director of Restaurants manages all restaurant outlets and is responsible for daily operations, guest satisfaction, Marriott B.S.A standards, Financial results,  associate satisfaction and development.  

REPORTS TO:  General Manager


Interview, hire, train and conduct performance evaluations.   Resolve problems, provide open communication and recommend discipline and/or termination when appropriate.   Lead by example, support inclusiveness, encourage collaboration and foster a culture of teamwork.  

Develop, implement and monitor schedules for all Restaurant Outlets to achieve a profitable result.

Participate with Restaurant Chef and General Manager in creation of menus designed to capture both hotel guests and the Syracuse community. 

Ensure all State, Federal and Corporate requirements pertaining to serving alcoholic beverages are met at all times.  Ensure all servers, bartenders and supervisors have up to date TIPS training certification.  

Ensure daily stand ups are held for each shift,  reviews guest feedback and restaurant guest satisfaction scores while ensuring brand and cleaning standards are met at all times. 

Ensure an atmosphere including TV and music is created that is consistent with the restaurant theme at all times.

Create and execute exciting restaurant events and effectively manage the events from start to finish ,including but not limited to "Street Block Parties", St. Patrick's Day Parades, New Year's Eve, Football, Hockey & Basketball.  

Stay informed of market trends and introduce new products and services to drive guest engagement, increase revenue and ensure a competitive position in the market.

Responsible for achieving restaurant budgets, forecast accurately daily, weekly, monthly for breakfast, lunch and dinner.  

Responsible for ensuring highest degree of cleanliness and service for COVID-19 safe practices including Crescent, Marriott,  CDC guidelines, and other county, state guidelines are met at all times.   This includes indoor and outdoor restaurant operations.

Continuously evaluate the performance and encourage teamwork and development of the associates in the Restaurants.  Plan and administer a training and development program within the department which will provide well trained associate at all levels.

Ensure all staff members approach encounters with guests and associates to Marriott’s ”Brilliance” service standards.

Greet restaurant patrons to enhance the dining experience, build rapport and be the face of the restaurants.  

Manages guest relations and ensure that any guest issues are addressed in a timely fashion that meets and exceeds guest expectation by providing excellent service.

Communicate both verbally and in writing to provide clear direction to staff and all inter department colleagues

Must be proficient in POS systems such as Micros

Execute and achieve Marriott B.S.A requirements successfully.

Perform any other job related duties as assigned.


Must have the ability to communicate effectively as a leader in the Restaurants.  Self-starting personality with an even disposition.   Maintain a professional appearance and manner at all times.  Can communicate  well with guests.  Must be willing to “pitch-in” and help co-workers with their job duties and be a team player.  Must be proficient in excel and read understand financial statements.
