The Hilton Hawaiian Village is seeking a Director of Food & Beverage to direct and organize the activities of the Food and Beverage Department to maintain high standards of food and beverage quality, service and merchandizing to maximize profits. Hilton Hawaiian Village is located in the heart of Waikiki, and offers over 2800 rooms, and an extensive F&B program. Our ideal candidate will have at least two (2) years of experience as a Director of Food & Beverage at a resort property with $18M or more in F&B revenue.

What will I be doing?

A Director of Food & Beverage with Hilton Hotels & Resorts is responsible for directing and organizing the activities of the Food and Beverage Department to maintain high standards of food and beverage quality, service and merchandising to maximize profits. Specifically, you would be responsible for the following:

  • Plans and directs the functions of administration and planning of the Food and Beverage Department to meet the daily needs of the operation.

  • Clearly describes, assigns and delegates responsibility and authority for the operation of the various food and beverage subdepartments, e.g. room service, restaurants, banquets, kitchens, steward, etc.

  • Develops, implements and monitors schedules for the operation of all restaurants and bars to achieve a profitable result.

  • Participates with the chef and restaurant managers in the creation of attractive and merchandising menus designed to attract a predetermined customer market.

  • Implements effective control of food, beverage and labor costs among all sub-departments.

  • Assists the area managers in establishing and achieving predetermined profit objectives and desire standards of quality food, service, cleanliness, merchandising and promotion.

  • Regularly reviews and evaluates the degree of customer acceptance of the individual restaurants and banquet service, to recommend to management new operating and marketing policies whenever declining or constant sales imply dissatisfaction by the customers, a material change in the make-up or the customer market, or a change in the competitive environment.

  • Develops (with the aid of subdepartment heads) operating tools necessary and incidental to modern management principles, e.g. budgeting, forecasting purchase specifications, recipes, portion specifications, menu abstracts, food production control, job descriptions, etc.

  • Continuously evaluates the performance and encourages improvement of the personnel in the food and beverage department. Plans and administers a training and development program within the department which will provide well trained employees at all levels and permit advancement for those persons qualified and interested in career development.



What are we looking for?

  • Minimum two (2) years of experience as a Director of Food and Beverage at a resort property 

  • Experience managing a F&B budget of $18M or more, with proven experience driving F&B revenue

  • Excellent communication and interpersonal skills with the ability to effectively lead and mentor a management team

  • Strong front of house experience, with a passion for guest service

  • Union hotel experience strongly preferred
