Description

The Restaurant Manager is under the supervision of the Director of Operations and shall be ultimately responsible for the daily operations of the Restaurant Department. The incumbent shall supervise all restaurant, kitchen, and dining room staff.

The incumbent is responsible to read, implement, and enforce all Prairie Wind Casino policies and procedures, OST Ordinance 94-01, Tribal/State Gaming Compact, OST Minimum Internal Control Standards, Title 31 Minimum Internal Control Standards, Prairie Wind Casino Employee Handbook, Restaurant Departmental Policy and Procedure Manual, and the State of South Dakota and Indian Health Services Codes.

Duties and Responsibilities

  • Maintain a clean, organized, safe, and secure environment for customers and employees.
  • Maintain the confidentiality and integrity of Prairie Wind Casino and its assets at all times.
  • Must be available to your department at all times.
  • Ensure food is handled and prepared according to Health Code standards.
  • Work closely with the Inventory Clerk to ensure all food and paper stock are maintained and ordered in a timely manner, to avoid shortages.
  • Schedule training and seminars in all aspects of the Food Service Industry for employees.
  • Schedule and facilitate regular departmental meetings.
  • Develop Quality Assurance Standards for all food handling, storage, and preparation.
  • Enforce and adhere to Attendance Policy, taking immediate action on all violations.
  • Work closely with Dining Room Staff to ensure excellent customer service.
  • Address all staffing needs and changes as they arise.
  • Develop and maintain departmental schedules, ensuring appropriate coverage for all shifts.
  • Perform 90-day and annual evaluations when they are due, in accordance with Prairie Wind Casino’s Policy and Procedures.
  • Develop and maintain departmental budget, providing reports to the Director Of Operations and Controller as required.
  • Develop and maintain departmental Cost Analysis Reports, providing information to the Director Of Operations as required.
  • Provide Food Service training to all departmental employees.
  • Ensure the maintenance of all equipment, scheduling repairs in a timely manner.
  • Raise level of professionalism and maintain excellent guest relations.
  • Work closely with Marketing department to increase revenue.
  • Perform other duties that may be assigned.

Requirements

Qualifications

  • Must pass an alcohol and drug test.
  • Possess a valid Drivers License.
  • Apply for and obtain an OST Key Gaming License.
  • High School Diploma or GED certificate required.
  • Minimum of an Associates Degree in Business Management preferred.
  • Minimum of five years of experience in the Food & Beverage Service Industry.
  • Minimum of five years of supervisory experience is preferred.
  • Have verifiable reference from previous employer.
  • Have proper documentation if applying for Indian Preference.
  • Have DD-214 if applying for Veteran Preference.

To perform this job successfully and effectively, the incumbent must be able to achieve essential duties satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.

  • Must be alcohol and drug free while on duty.
  • Possess excellent social skills to provide excellent customer service.
  • Have knowledge of the MICS and NIGC Rules and Regulations as it pertains to the Restaurant Department.
  • Demonstrate basic computer skills.
  • Demonstrate ability to create reports on various software applications.
  • Possess knowledge and skill in the operation of a cash register and other electronic equipment.
  • Ability to work closely with supervisors within the Food & Beverage Department.
  • Ability to lift a minimum of 50 pounds.
  • Report to work as scheduled, following attendance policy at all times.
  • Demonstrate good working knowledge of the State of South Dakota Health Codes.

Additional Information

Salary: $50,000 – $80,000 DOE
