  • Maintains Cool River products standards; follows recipes and procedures, as well as proper portion and yield controls.
  • Knows Cool River food and how to prepare to standard.
  • Maintains all Company policies, health, safety and sanitation standards.
  • Personal appearance to Company standards each day/shift.
  • Communicates clearly to all other line positions and Expeditor.
  • Maintains job function in support of other job functions within restaurant.


  • Understands that focus of job is to exceed the guests’ expectations -- finds ways to say “yes” to the guest -- notifies management immediately when there is a guest complaint or a failure to meet a guest’s expectation has occurred and works with management and/or front-of-the-house staff to then exceed the guest’s expectations in resolving the situation.
  • In some areas, food handlers permit may be required.
  • Understands and follows recipes, portion control, production charts, food loss report, smallware breakage chart, directions, chit sheets and/or handwritten food orders, other written and verbal directions
  • Communicates with Expeditor and line positions.
  • Significant movement throughout shift.
  • Stands for entire shift.
  • Walking, bending, stooping, turning, twisting the upper body, and lifting objects up to 50 pounds; good control over motor skills, ability to sweep and mop.
  • Able to grasp and handle plates while loading with food product; ability to handle tools which turn food items on the grill..
  • All physical movements must be performed with speed and accuracy.
  • Punctual and dependable.


Extreme environmental demands on the line cook are few.  During warm seasons of the year, back-of-the-house staff may be working in kitchen that may reach 110º.  The need to keep food at a minimum of 140º, coupled with extreme heat in some parts of the country cause this interior condition to occur. 

The only chemicals involved in this job are of the cleaning variety.  Training is given as to the appropriate use of these cleaning agents.  Task descriptions are available which give detailed instructions for cleaning, the use of chemicals for cleaning and maintaining health and sanitation standards.

During a typical work shift, back-of-the-house staff do not have direct guest contact.  Kitchen associates need to be highly autonomous within their specific job functions, but have extensive interaction with co-works to accomplish work -- must be able to be a team player.  Meal periods during a shift may be very stressful and sometimes frustrating.
