Leading an F& B team to Excellence by opening the new AC by Marriott, Fort Lauderdale Beach
ESSENTIAL FUNCTIONS: (include the following. Other duties may be assigned.)
* Must be able to jump into the kitchen line when needed.
Estimates food and beverage costs and requisitions or purchases supplies.
Confers with food preparation and other personnel to plan menus and related activities such as dining room, bar, and banquet operations.
Inspects food and food preparation to maintain quality standards and sanitation regulations. Investigates and resolves food quality and service complaints.
Reviews financial transactions and monitors budget to ensure efficient operation, and to ensure expenditures stay within budget limitations.
Requests identification from customers when legal age is questioned.
Estimates food consumption and purchases or requisitions foodstuffs and kitchen supplies.
Reviews menus, analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu items.
Directs food apportionment policy to control costs.
Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.
Supervises Banquet staff and operations including menu development, food costing, food preparation and service delivery
Work with Banquet Manager and Catering sales staff in developing and marketing local catering promotions including wedding packages, Christmas parties, office parties, local meetings, holiday functions, packages and charity events.
Ensures excellence in food and beverage service delivery
* Other duties and responsibilities as assigned by the GM
Requirements include: Strong communication skills by speaking, reading, writing, texting and emailing primarily in English.
Mathematical skills, precise measurements as well as by estimations.
You may be required to work nights, weekends, and/or holidays.
This job requires ability to perform the following: regularly lift and/or move up to 25-50 pounds, frequently standing up and moving about the work area, handling objects and equipment to help maintain the facility, frequently bending, stooping and kneeling, working in areas of high temperatures around heavy equipment found in that of a hotel/kitchen environment.
Four year degree from college or technical school; or equivalent combination of education and experience
Five (5) or more years of experience in a food and beverage leadership role in a comparable hotel environment
Strong leadership skills with the ability to effectively lead, motivate and develop others
Marriott Brand experience strongly preferred
