The HALL Arts Hotel is seeking to hire a kitchen supervisor trained, influenced, and passionate about modern American cuisine to lead one of Dallas' hottest restaurants, Ellies' at the Hall Arts Hotel. Located in the heart of the upscale neighborhood of the Dallas Arts District, Ellie's menu captivates diners with its' masterful remix of authentic American cuisines with a Napa Valley touch. From street food-styled starters to meal-sized classics, steak specialties to market-fresh cuisine, Ellies will embrace the bounty of the Dallas community and use the freshest ingredients to deliver the fresh and local flavors of Texas.

JOB SUMMARY:

Supervise and coordinate activities of cooks and kitchen staff. Determine how food should be presented and create decorative food displays. Ensure proper portion, arrangement, and food garnish to be served. Prepare special meals or substitute items. Assist management in hiring, training, scheduling, evaluating, counseling, disciplining, motivating and coaching employees.

ESSENTIAL JOB FUNCTIONS:

  • Ensure the quality of the food items and notify manager if a product does not meet specifications.
  • Follow and ensure compliance with food safety and handling policies and procedures.
  • Prepare and cook food according to recipes, quality standards, presentation standards and food preparation checklist, establishing priority items.
  • Monitor the quantity of food that is prepared and the portions that are served in to control food waste and ensure that good food is not thrown away.
  • Assign and ensure work tasks are completed on time and that they meet appropriate quality standards.
  • Assist cooks and kitchen staff with various tasks as needed and provide cooks with needed items.
  • Assist management in establishing and communicating goals, performance expectations, timetables and deadlines for shift or departmental operations to hourly employees and ensure that they are understood.
  • Maintain up-to-date knowledge of company Food Safety Programs within assigned area of responsibility, as well as all local, state and federal regulations.
  • Complete safety trainings and certifications.
  • Maintain confidentiality of proprietary information.
  • Handle sensitive issues with employees and/or guests with tact, respect, and diplomacy

MINIMUM QUALIFICATIONS:

  • Technical, Trade or Vocational School degree required.
  • Previous supervisor or lead experience preferred. 
  • Food Handlers certified.
  • Basic oral and written communication skills and able to follow instructions.

ADDITIONAL QUALIFICATIONS:

  • Maintain up-to-date knowledge of company Food Safety Programs within assigned area of responsibility, as well as all local, state and federal regulations.
  • Must have the physical strength, stamina and agility to perform the assigned duties to include lifting objects up to 25 pounds.
  • Requires problem solving abilities.
  • Maintain a clean, safe and environmentally responsible work environment.
  • Must be able to interact with co-workers and have a sense of TEAM.
