Description

A Butcher at Hilton hotels is responsible for cutting, trimming and grinding meats, such as beef, pork, poultry, and fish for sale at the hotel's restaurants in the hotel's continuing effort to deliver outstanding quality, service and financial profitability.



What will I be doing?

 

As a Butcher, you would be responsible for the handling of meat in accordance with food safety principles and established standards in the hotel's continuing effort to deliver outstanding quality, service and financial profitability. Specifically, you would be responsible for performing the following tasks to the highest standards:


  • To work with poultry, beef, pork, sea foods, sausages and other meat types. 

  • Will portion meat cuts according to specifications and/or prepare large quatities of different cuts to supply hotel's restaurants.

  • Prepare meat into forms ready for cooking using a variety of actions, including boning, tying, grinding, cutting and trimming.

  • Determine wich portions to grind and decide how much meat to make into products sucha as sausages. 

  • Use skewers, bone knives, twine and other tools to lace, tie and shape meat cuts so that they are ready for culinary team.

  • To weigh, package and label meats according to food safety principles.

  • Rotate products to reduce the chance of any meat spoiling to reduce waste and loss of profits.

  • Responsible for equipment maintenance, through regular cleaning and routine repairs, including sharpening knives and saws.

  • Receive deliveries of meat and inspect them to ensure that they adhere to the highest quality standards and are not expired.

  • Maintain and clean the meat preparation counter to reduce the risk of food contamination and adhere to food safety guidelines.

  • After each shift, sanitize and clean areas and equipments following safety guidelines and regulations, in order to prevent cross-contamination or the spread of food-borne illnesses.  

  • Maintain records of meat inventories and on-hand supplies.

  • Inspect meat prior to processing to ensure correct quantities and maintain a high level of product quality.

To be successful in this role, the candidate must also demonstrate:


  • High school diploma or equivalent, required

  • 2 - 3 years' experience as a butcher in a supermarket and/or local meat market

  • Culinary school 2 to 4 year degree from vocational or technical school or university, preferred

  • ServeSafe Certification, preferred 

In addition, the candidate must be able to show  the following skills, knowledge and abilities:


  • Extensive knowledge of meat cuts and standard weights as well as the proper cuts for typical recipes.

  • Able to read and follow instructions

  • Strong knowledge of proper food handling procedures

  • Able to work as part of a team in a busy kitchen atmosphere

  • Outstanding communication skills, both written & verbal

  • Enthusiastic and positive personality with the ability to build trusting relationships with others

  • Proven organizational skills, works well on their own

  • Mental arithmetic skills

  • Attention to detail and dexterity

  • Hand-Eye Coordination: requires great knife skills. A steady hand will help you greatly.

  • Stamina: Kitchen hours can be long and grueling. You will need to be able to stand on your feet for long periods and lift heavy objects from freezer or storage.


  • Ability to work in varying temperatures
