About This Job

Main Duties:

Responsible for all highest standards on:

  • Maintain the following programs: house-made syrups, fresh juices, batching, barrel aged cocktails, bespoke coffee, hot beverages and any specialty cocktails
  • Oversee the appearance and timeliness of the cocktails, coffees, juices, & wine levels that are sent out to the floor from the service well
  • The overall cleanliness of the bar including: underneath bar top, the sink basins, speed rails, storage areas, floors and drains below the wells, back bar bottles, glassware shelves, all metal surfaces on low boys, and espresso machine, etc…
  • Bar team side work sheets – keep side work sheets current, cocktail recipes, and specialty ingredients
  • Bar is always set-up to Health Department standards
  • Opening/Closing bar duties to Mayfair Grill standards
  • Assist and participate in the development of seasonal changes to the Soho House New York beverage program, including new product tasting with suppliers
  • Recognizes our guests and suppliers and ensures they receive our best level of service at all times
  • Maintain, participate and assist in further development of the beverage training program for all staff

Weekly Responsibilities:

  • Participate in inventory duties: Liquor inventory once a week, CGS inventory twice a month, liquor and bar item ordering with Manager(s)
  • Assist in trainings and/or pre-shifts and helps to create training concepts/ideas for staff
  • Participate in trainings and classes for guests
  • Work 2-3 closing shifts a week to oversee the cleanliness of the bar
  • Performs other duties as assigned by supervisor/manager

Maintenance Tasks:

  • Communicate to bar team, floor staff and managers on any changes regarding the beverage program and/or when items are running low, out of stock or backordered
  • Alerts management and other staff of spirits, products, cocktails, etc, throughout the shift as needed
  • Ensures that the pre-shift notes and specials are being communicated to all bars every night
  • Maintains inventory/sufficient levels and quality of special projects, i.e., Barrel Aged cocktails
  • Ensure that the correct menus are stocked behind the bar every shift
  • Ensures that cigarettes are always stocked and alerts Manager(s) and or Purchasing Manager when items are low (located in office storage)
  • Checks the opening/closing side work of other bartenders
  • Maintains and executes breaks for bar team throughout the shift, while always communicating with F&B Managers
  • Checks out the barbacks at night and oversees the execution and completion of their side work and closing duties
  • Maintaining the appearance and standards of the bar garnishes, including the stocking of whole fruits for the fruit bowls/garnishes
  • Ensures that the barbacks have properly set the bar top and wells and that the garnishes meet Mayfair Grill standards… clean fresh water, beautiful and healthy appearance of herbs, polished bitter decanters, polished straw caddies, fresh sugar, salt caddies, clean scupper, wiped down beer taps, etc…
  • Ensures that bottles are stocked, backups and requisitions are in order and completed daily, the team at the end of each shift stocks all lowboy fridges
  • Monitors quality of ice in respective wells and ensures that crushed and cubed are separate. Ensures that the barbacks are maintaining proper ice levels in all wells and that they are carefully handling its distribution.
  • Ensures that weekly cleaning duties and weekly deep cleaning of ice machines are completed and maintained
  • Assist in setting up storage maps, speed rail, & fridges based on any new menu changes and products

Uniform

  • Head Bartender is expected to ensure the team has a well-groomed appearance, and each staff wear the Soho House uniform
  • Head Bartender must always uphold the Mayfair Grill uniform standard and always be well-groomed and ready to work before entering the bar
