The iconic Waldorf Astoria Las Vegas is seeking a dynamic Pastry Sous Chef to join the team at this award-winning property!

Located in the heart of the Las Vegas Strip, this luxurious hotel has 389 rooms, 6 food and beverage outlets, and 12,000 square feet of meeting space. This include a 3-meal restaurant, fine dining restaurant, tea lounge, bar, pool cafe, and in-room dining.

In this role, you will assist in overseeing the hotel's pastry department managing a team of and reporting directly to the Executive Pastry Chef.  The ideal candidate will be an passionate culinarian and leader. This individual must thrive in high-volume, fine dining operations and be able to pay close attention to detail. At least three (3) years of hotel pastry experience is a must and background in luxury hotels is a plus.

What will I be doing?

Essential Duties and Responsibilities include the following and other duties may be assigned:

  • Create / prepare / produce / bake pastries and desserts according to standard recipes for the restaurant.
  • Decorate pastries / cakes with creativity and skill.
  • Maintain adequate supply of all prepared products on hand and ensure the proper storage.
  • Prepare in accordance with quality, availability and seasonality and ensure market lists are completed on a daily and weekly basis
  • Ensure compliance with health, safety, sanitation and alcohol awareness standards.
  • Assist and help coordinate all menu planning and implementation
  • Train, supervise, schedule and assist in evaluating staff.
  • Strive for perfection in the outlet, 100 % Guest satisfaction
  • Ensure food standards and presentation are maintained and always improved
  • Organize food production in a cost effective and hygienic manner
  • Weekly schedule generation for outlet
  • Assist in recruitment, training and discipline of all kitchen staff
  • Constantly strive to improve operating procedures
  • Find ways to improve the efficiency of the operations that will benefit our clients
  • Find methods of reducing costs without affecting the level of service or product received by the guests
  • Provide coaching and discipline for outlet employees
  • Maintain and monitor Safe and Sound Procedures
  • Use the Employee Handbook in understanding the consistent way of Communicating Rules & Regulation to our Team.
  • Develop Standard & Procedures
  • Being an effective listener, before acting is essential. (Seek to understand)
  • Attend meetings when designated to do so
  • Controlling & being accountable to the effort in achieving both Food & Labor Cost Goal
  • Control food cost by maintaining food standards at reasonable cost through liaison with the Purchasing Department to check prices, market price"
