About This Job

As a Sommelier, you will be responsible for complete knowledge of wine lists, wine and food pairing. You will also set the stage for guest experience with your welcoming smile and service.

Core Job Responsibilities

  • Maintain complete knowledge of wine list, and wine and food pairing
  • Collaborating with chefs and the food and beverage manager when making selections
  • Creating food and wine pairings for each of our seasonal menus
  • Recommending wines to patrons based on price, personal taste, and food selection
  • Overseeing the serving and storage of wine and training the wait staff on the wine selection
  • Making sure wines are served in the correct glassware and at the proper temperature
  • Negotiating purchase prices with vendors
  • Holding one wine-tasting event each month
  • Making sure all guests served wine are of proper age
  • Following all safety and health regulations
  • Collect money, while following all proper cash handling and comp procedures
  • Clean equipment, tools, and supplies and ensure equipment is in good working order, including cleanliness, sanitation, and appearance of work station
  • Maintain and update cellar/storage inventory according to set pars and internal controls, and request product to maintain stock in designated area
  • Meet regularly with the wine trade to actively seek quality wines  for the restaurant wine program as well as evaluate wines and other beverage for potential purchase
  • Eliminate waste by training and supervising employees on wine knowledge, pour levels, proper storage, etc
  • Verify accuracy of wine delivery ordered and received from the main warehouse and return or exchange deliveries when a warehouse error has occurred
  • Maintain appropriate beverage costs by managing purchases and requisitions; place wine requisitions at the end of each service
  • Perform other job-related duties as requested


  • Must be 21 years or older
  • Must obtain a TAM card
  • Knowledge of beverages on menu, including characteristics of wine and champagne by the glass; major wines, designated glassware, terminology, and garnishes
  • Knowledge of health, safety and sanitation regulations and procedures
  • Knowledge of various Point of Sale (POS) devices
  • Excellent customer service skills as well as interpersonal skills to deal effectively with all business contacts
  • Knowledge of proper service techniques
  • Knowledge of Microsoft Outlook, Excel, and Word
  • High school diploma or equivalent
  • May obtain a gaming card
  • Court of Master Sommeliers Certification or equivalent
  • 2+ years of experience as a sommelier or wine steward(ess)
  • Familiarity with vineyards’ winemaking processes
  • High school diploma or equivalent
  • Work varied shifts, to include weekends and holidays


  • Four (4) years of service experience in a similar dining environment
  • IP/inventory system experience

Physical Demands

·Work is performed in a hotel/resort setting.
  • Must be tolerant to varying conditions of noise level, temperature, illumination, and air quality.
  • May be exposed to smoke
  • The noise level in the work environment is usually moderate to loud.
  • Constant contact with executives, department management, employees, and guests.
  • Prolonged sitting or standing and mobility.
  • Balancing, stooping, kneeling, crouching, reaching, pushing, pulling, lifting, grasping, talking, hearing, repetitive motions Lift, carry, push, pull or otherwise move objects and/or move up to 75 pounds occasionally
  • Eye/hand coordination.
  • Use of standard office equipment.
  • Ability to distinguish letters, numbers, and symbols
  • May be required to work evening, weekends, and holiday shifts.
