A wonderful opportunity on the Seacoast in the vibrant town of Portsmouth for a Sous Chef to join a team in a historic upscale steakhouse. We are expanding our service to include lunches and more functions and are growing our team.

The Library is a top quality, well organized, highly established restaurant looking to add a professional Sous Chef in our kitchen, following our Executive Chef’s specifications and guidelines. The successful candidate will have a strong passion for culinary arts and a focus on a perfect customer experience, is comfortable in busy situations and is someone who enjoys playing as a team.

Responsibilities

  • Assist the executive chef in all aspects of food production - preparation, grilling, cleaning, line cooking.
  • Fill in for the Executive Chef in planning and directing food preparation when necessary
  • Produce high quality plates
  • Help in the preparation and design of all food menus
  • Ensure that the kitchen operates in a timely way that meets our quality standards
  • Resourcefully solve any issues that arise and seize control of any problematic situation
  • Order supplies to stock inventory appropriately
  • Comply with and enforce sanitation regulations and safety standards. Practice and enforce proper food storage safety, allergy awareness, food storage safety, compliance with health department code, and all other safety and security policies and procedures
  • Maintain a positive and professional approach with coworkers and customer

Requirements

  • We are open to developing an experienced cook who is ready to step up to become a Sous Chef. Must have 3+ years of cooking and culinary experience and a good understanding of all aspects of working in a kitchen
  • Understanding of various cooking methods, ingredients, equipment and procedures
  • Excellent record of kitchen and staff management
  • Accuracy and speed in handling emergency situations and providing solutions
  • Familiar with industry’s best practices and standards
  • Culinary school or related certificate would be a plus

Benefits

Salary - highly competitive based on experience

Pay: $70,000.00 - $75,000.00 per year

Eligible for a substantial year end bonus

2 weeks paid vacation. Competitive Paid Time Off Structure including Vacation, Sick, Holiday Pay, Jury Duty Leave, and Bereavement Leave

2 days off per week (50hour work weeks +/-)

The kitchen closes at 9 on weekdays and 10 on weekends, so no late nights.
