Located in the heart of Downtown Riverside, the beautiful and iconic Mission Inn Hotel and Spa has an immediate opening for and energetic, outgoing and experienced individual to join our culinary team and fill the position of Sous Chef. In this role, you will be responsible for providing oversight and direction to kitchen associates, ensuring quality in food production, establishing and maintaining food safety and sanitation standards, control of inventory, and maintaining food & labor costs.

What you will be doing:

  • Supervise kitchen associates to provide exceptional quality in food production.
  • Maintain knowledge of and ensure associate compliance with all hotel policies.
  • Interview, train, and council (where appropriate) kitchen associates.
  • Ensure appropriate inventory of supplies needed for associates to effectively do their jobs
  • Establish the shift’s priorities and assign production and preparation tasks for associates to execute.
  • Review banquet event orders
  • Develop and maintain system to ensure items are received and properly stored
  • Develop and maintain cleaning schedule for the kitchen that meets all hotel, corporate, and health standards
  • Ensure associates report to work as scheduled and maintain documented records for those that do not comply.
  • Monitor performance of associates and ensure all policies are being followed.
  • Ensure all recipe cards, production schedules and plating guidelines are posted and followed
  • Conduct frequent walk throughs of the kitchen and correct any deficient items to ensure quality and details are being maintained
  • Assist Executive Chef with menu development and execution
  • Ensure associates report to work as scheduled and document any deficiencies.
  • Review sales and food cost with the Executive Chef to ensure the department is meeting budgeted costs.
  • Ensure that excess items are utilized efficiently.
  • Oversee and direct training of new hires in specified phases of the kitchen operation. Maintain an on-going training program for existing staff. Back to basics training maintained.
  • Perform any other job-related duties as assigned.
  • Comply with attendance rules and be available to work on a regular basis.

What is required:

  • Verbal & Written Communication skills
  • 2 years prior experience in a culinary role
  • Knowledge of all federal, state, and local laws/regulations pertaining to food safety and food production
  • Willingness to work a flexible schedule including nights, weekends, and holidays
  • Ability to thrive under time constraints, stress
  • Ability to be on your feet walking continuously
  • Ability to grasp, push, pull, lift or carry up to a 100lbs with or without reasonable accommodation

For applicants who will be working in California, the anticipated compensation range for the position is $24.29 - $26.32 per hour. The salary offered to a successful candidate will be dependent on several factors that may include, but are not limited to years of experience within the job, years of experience within the required industry, education, work location, etc. Crescent Hotels is a multi-state employer and the salary ranges indicated herein may not reflect positions that work only in other states.
