Executive Pastry Chef

Description

Responsibilities:

1. Menu Development and Execution
1. Develop and design creative daily and seasonal menus and offerings in collaboration with the executive chef and the entire culinary team.
2. Ensure the timely and consistent execution of pastry items according to established recipes and presentation standards.
3. Stay updated on industry trends and introduce new dessert and pastry concepts, techniques, ingredients to enhance all menu offerings.
2. Team Management

1. Hire, train, and supervise a team of pastry chefs and other kitchen staff.
2. Provide guidance, coaching, and performance feedback to ensure continuous improvement and professional growth.
3. Establish and enforce standardized recipes, portion sizes, and plating guidelines.
4. Foster a positive and collaborative work environment that promotes teamwork, creative, and excellence.

1. Quality Control and Food Safety

1. Maintain high standards of food quality, taste, and presentation.
2. Ensure compliance with all food safety and sanitation regulations and standards.
3. Conduct regular inspections and audits to identify and address any quality or safety issues.

1. Inventory and Cost Management

1. Manage inventory levels, order supplies, and control food costs within budgetary guidelines.
2. Monitor product quality, freshness, and shelf life.
3. Optimize ingredient usage and minimize waste through effective production, planning, and organization.

1. Collaborative and Communication

1. Collaborate with the Executive Chef and other department heads to ensure smooth kitchen operations and menu coordination.
2. Communicate effectively with front of house staff to provide information about menu items, accommodate guest preferences, and address any concerns.

For applicants who will be working in California, the anticipated compensation range for the position is $75,000 ($36.06 hourly) - $90,000 ($43.27 hourly) . The salary offered to a successful candidate will be dependent on several factors that may include, but are not limited to years of experience within the job, years of experience within the required industry, education, work location, etc. Crescent Hotels is a multi-state employer and the salary ranges indicated herein may not reflect positions that work only in other states.
