Summary

Under the guidance of the Food & Beverage Manager, assist in the day-to-day operations of the Food and Beverage department (front of house) to ensure all customers are given the proper level of customer service, establish the tone for the shift, train department staff, ensure conformance of all established Food and Beverage policies and standards. In addition, we strive to deliver our Five Star Experience to Guests and fellow Team Members.   • Provide outstanding customer service to guests and all other employees by exceeding our mission statement.
  • Lead by example and carry out our Five Star Experience to Guests and all Team Members by fulfilling our Mission Statement, Service Promise and following department service standards. This entails consistency performing our service expectations of: Welcoming, Proactive, Seamless, Personalized and Valued.
  • Continually coach and support Team Members to ensure they have the skills, tools and resources to successfully complete their jobs, including the delivering of the Five Star Experience expectations.
  • Practice, support, and always promote Spotlight29 Casino & Tortoise Rock Casino Five Star Experience company-wide service mission and service standards.
  • Supervise all hourly employees in the food and beverage outlets and is responsible for assisting in the administrative tasks related to the outlets.
  • Assist in scheduling, Kronos, requisitions and allocating Front of the House F&B Team Members to ensure appropriate levels of coverage according to probable and actual number of guests, promotional and seasonal Casino activities, and customer traffic.
  • Assist, when necessary, in providing service to customers to insure the quality of customer service is maintained at all times for Casino guests.
  • Assist in the training and development of the staff through daily stand up meeting, SMART philosophy, coaching, counseling and mentoring.
  • Responsible for accurate beverage controls through proper utilization of the Berg Liquor control System.
  • Ensure that proper liquor requisition procedures are in place and the correct amounts and brands of liquors are requisitioned and stored using the liquor breakage par sheets for each beverage outlet.
  • Assist in the development, implementation and maintenance of daily checklists, product pars and clean up lists to create an inviting, consistent and professional environment to enhance the guest experience.
  • Provide leadership and guidance to staff with regards to restaurant standards, guest experience and consistent product quality.
  • Provide ideas and feedback with regard to advertising, marketing and product specials to increase revenues.
  • Utilize hourly sales reports along with historical data and entertainment venues to develop and maintain a proper scheduling matrix.
  • Provide ideas and feedback with regard to improving staff productivity and increased revenues through sales contests, etc.
  • Assist with monthly outlet beverage inventories to meet or improve pouring cost budget.
  • Abides by all State, Federal and local liquor regulations pertaining to serving alcoholic beverages to minors and intoxicated guests.
  • Continually train staff in policies, procedures, and service standards.
  • Ensure Food & Beverage department staff adheres to Casino’s cash handling policies and procedures.
  • Ensure that the Casino bars and food outlets are properly stocked with all necessary supplies.
  • May assist in the interviewing of job applicants interested in joining the staff.
  • Maintain excellent communications with all Directors and Supervisors.
  • Implements approved departmental policies and procedures.
  • Ensure the budget for the department is monitored and adhered to by implementing effective processes and procedures.
  • Prepare necessary data for the budget in area of responsibility.
  • Keep abreast of competitive changes including industry trends and local competitive set.
  • Develop, maintain and nurture a positive work environment.
  • Responsible for maintaining a disciplined environment and implement practices that promote safety, quality and productivity.
  • Help coordinate and supervise training, assignments and development of subordinates.
  • Ensure compliance with all Minimum Internal Control Standards (MICS) as well as all Tribal Internal Control Standards (TICS).
  • Present a positive image of the Tribal organization to its guests and vendors and to assist them as required.
  • Must follow all safety policies and procedures and attend all scheduled safety meetings and training as a condition of employment.
  • Able to make difficult decision in a fair and honest manner.
  • Strong verbal and written communication skills.
  • Perform any other duties that may be assigned from time to time.
Supervisory Responsibilities

Manage directly and indirectly all employees of the Food & Beverage Department.  Adhere to the Tribal organization’s policies, procedures and applicable laws.

Responsible for the overall direction, coordination, and evaluation of this unit.

Carry out supervisory responsibilities which include but are not limited to: interviewing and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Qualifications

Education And Experience (Must Be Documented)
  • Must have a high school diploma or G.E.D. equivalent
  • Associate's degree (A.A.) or equivalent from two-year college or technical school preferred
  • Six months to one-year related experience preferred
Certification, Licenses And Any Additional Requirements
  • Must pass periodic random drug screens.
  • Must be able to pass background suitability investigation.
  • Must obtain a Tribal Gaming License.
  • Must obtain all other applicable certifications and licenses.
  • Must provide proof of eligibility to work in the United States within 72 hours of employment.

They may be occasionally required to climb or balance, stoop, bend, push, pull, twist, kneel, crouch, or crawl. The employee must occasionally lift up to 50 pounds and/or push, pull up to 100 pounds. The employee is occasionally required use repetitive movements to complete tasks. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus. Employee may be occasionally required to work in low light conditions, and may be exposed to loud noise for extended periods.

  • Multiple locations.
  • Some enterprises are open 24 hours per day, 7 days per week; therefore, you must be flexible to work any and all hours.
  • Must be available for emergency calls 24/7.
  • Must be available to work weekend and holidays.
  • Some enterprises are gaming facilities.
  • Some enterprises are not a smoke-free environment.
  • Surveillance cameras and audio equipment monitor the premises recording activity throughout most of the facilities on 24 hours per day, 7 days per week basis.

Earlier generations always knew that family standing shoulder to shoulder was more important than anything else in life. It has been said more times by family members that friends will come and go, but we are the ones that will be here always when you are in trouble, when you need help, and when you need a safe place to call home. Loyalty is a key factor to building unity. It can take on many definitions and the one that is relevant here is to put family first, and to hold tight to the tender hearts that share the same Tribal blood.

We are a unique blend of qualities that make us the well rounded family that we are, and we are rich in a nontraditional sense of history, culture, beliefs and heritage. Value cannot be placed on such things and can only retain value by being passed from one generation to the next. 

There will come a time in life when tough decisions will need to be made and in the face of adversity, rely on the past. Remember what worked for us and what worked against us.  Throughout our history, relying on our instincts and standing with conviction right or wrong, decisions were still ours. Our firm belief that we do what is best for us as a whole has given us valuable knowledge that comes with experience, a true heart and putting our best foot forward.  

We always strive for the best, and we achieve our goals for self-sufficiency, self-reliance, self governance with strong beliefs of honesty, hard work and a straight forward manner. We must stay true to ourselves or run the risk of losing the public face of the Tribe that has become known for its forthright, sincere dealings in business and personal relationships, and being counted on consistently to meet our obligations promptly. The honor and prestige of being a part of this Tribe is insurmountable, but true to our historical beginnings we will forever remain grounded and humble. Our strength and beliefs will echo resoundingly for generations to come.
