Compensation: $25.00 per hour, Full-Time

Position Summary:

Under the direction of the Executive Chef, the Sous Chef oversees all aspects of food ordering, storage, preparation, presentation and the care and maintenance of kitchen facilities at Tesuque Governor.

Note: Native American preference will be given.

Essential Duties & Responsibilities:

  • Knowledge of dining and food maintenance operations and customer service.
  • Ability to demonstrate outstanding guest service utilizing the Tesuque Proud Standards at all times.
  • Knowledge of food handling procedures. 
  • Knowledge of menu development.
  • Must be a self-starter with excellent follow through.
  • Must be able to work flexible hours including holidays, nights and weekends.
  • Must be 21 years of age or older
  • Display exceptional leadership by providing a positive work environment.
  • Using email, must be able to place orders from specified food vendors, ensuring needed product is always available. 
  • Expedite all dishes, ensuring quality and appearance. 
  • Communicate efficiently with executive chef and F&B director of daily tasks.
  • Advocate sound financial/business decision-making, demonstrates honesty, integrity and leads by example.
  • Improves service by communicating and assisting executive chef and F&B director in understand guest needs, providing guidance and feedback, and individual coaching when needed.
  • Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met.
  • Recognizes superior quality products, presentations and flavor.
  • Ensures compliance with food handling and sanitation standards.
  • Ensures all equipment in the kitchen is properly maintained and in working order in accordance with local Health department and Casino standards.
  • Ensure proper grooming and hygiene standards for all kitchen staffs.
  • Interacts with guests to obtain feedback on food quality, presentation and service levels.
  • Actively responds to and handles guest problems and complaints.
  • Maintain quality levels of receiving, storage, production and presentation of food.
  • Ensure sufficient staffing levels are scheduled to accommodate demands.
  • Identifies the developmental needs of kitchen staffs and provide coaching, mentoring, and helping them to improve their knowledge or skills.
  • Frequently review finished products for quality and presentation before the orders are send to guest.
  • Able to perform additional duties with in the Cottonwood Corporation as requested by the F&B Director and the Executive Chef.

Experience and Education:

  • Minimum of 3 years of kitchen leadership experience with a record of progressive advancement.
  • Experience reading, analyzing, and interpreting policies and procedures, directions, reports, and other working documents.
  • Experience in writing reports, business correspondence, menus, and other working documents.
  • Ability to effectively communicate one-on-one, in small group situations, and in moderate to large gatherings of associates and /or executives. 
  • Bilingual English/ Spanish preferred; not required.

Minimum Qualifications:

  • Minimum of 3 years of kitchen leadership experience with a record of progressive advancement.
  • Must have the ability to solve problems and deal with a variety of concrete variables in situations where only limited standardization exists. 
  • Must have the ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form. 
  • Must be able to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, percentages, and decimals.

Physical Requirements:

While performing the duties of this job, the employee is required to stand and walk for extended periods. The employee occasionally is required to sit, stoop, kneel, crouch, or crawl.  The employee will be required to talk for extended periods and must be able to hear and understand. The employee must occasionally lift or move up to fifty (50) pounds.  The work environment includes a variety of setting the following: food, oils, and cooking surfaces. The incumbent occasionally exposed to loud noise, change in temperatures, and second-hand smoke.

Work Environment:

The work environment includes but not limited to food prep areas, and food storage areas (freezer, coolers etc.); exposed to hot food, oils, and cooking surfaces. The incumbent will occasionally be exposed to loud noise and must be able to tolerate second-hand smoke at times.
