Description

About Populus

Populus is the first carbon positive hotel in the United States. Inspired by the aspen groves that give the building its name and its form, the property was designed to return more than it consumes, from the materials within its walls to the ingredients on its plates. Located in the center of Denver, Populus was built to leave the city better than it was found.

The position

The Catering Sales Manager holds the catering business at Populus from the first conversation through to the moment the last guest leaves. The role develops and maintains relationships across corporate and social markets, shapes each event alongside the culinary and operations teams, and stays with the client through execution rather than handing the file across at the point of sale.

Responsibilities

  • Solicit new catering business and strengthen relationships with existing accounts across the corporate and social markets.
  • Meet with clients, conduct property tours, and present the facilities, culinary program, and services at Populus.
  • Develop menus with the Executive Chef and culinary team, matched to each client's occasion, guest count, and budget.
  • Prepare proposals, contracts, and event documentation, and maintain complete and current account records.
  • Communicate event detail across Culinary, Banquets, Engineering, and Rooms so that every department is prepared well before the day.
  • Attend event set up and remain present through execution, resolving what arises in the moment.
  • Prepare and present weekly and monthly catering and sales reporting.
  • Support the onboarding and development of catering associates as the team grows.

    What the position requires

  • A minimum of 3 years’ experience in catering sales, event sales, or a comparable hospitality sales role.
  • Working knowledge of food and beverage service standards and event operations.
  • The ability to assess client needs, negotiate terms, and hold a commercial conversation with warmth.
  • Availability for evenings and weekends when events require it.
  • The ability to move throughout the property to conduct site inspections.

    Helpful, though not required

  • Bachelor's degree in hospitality management, business, marketing, or a related field, or equivalent experience in catering, event, or hospitality sales preferred.Experience in a luxury, lifestyle, or independent property.
  • Familiarity with Delphi, Amadeus, or a comparable sales and catering system.
  • Established relationships within the Denver corporate, nonprofit, or social event market.
  • Experience selling events where sourcing and sustainability form part of the offer.

We are looking for someone who can hold a commercial conversation and a hospitality one at the same time. The systems and the market can be learned, and candidates arriving from adjacent event sales backgrounds are encouraged to apply.

    Sustainability and stewardship

The catering conversation at Populus is unlike most, because clients frequently select the property for reasons connected to how it was built and how it operates. This role explains the sourcing behind the menu, works with clients on waste reduction and material choices, and treats the sustainability story as part of the sale rather than a footnote to it.

    Compensation and benefits

    $70,000 to $75,000 annual salary

  • An RTD EcoPass, which covers transit to and from the property at no cost to you.
  • Medical, dental, and vision coverage for eligible associates.
  • 401(k) with company match.
  • Paid sick leave under the Colorado Healthy Families and Workplaces Act, and paid time off for eligible associates.
  • Hotel discounts throughout North America.
  • Training and development, including the service and ethos programming developed specifically for this property.

If you care deeply about people, take pride in doing the right thing, remain curious, and want to contribute to something larger than a single shift, you will find a place at Populus. Together we create experiences that leave our guests, and the world around us, better than we found them.

    About Populus Denver

We started with a question: What would it look like to bring nature back into our cities? As a community of environmentalists and entrepreneurs, we imagined a hotel inspired by nature. From biophilic architecture, natural materials, original art, and seasonal cuisine, there is a love for the natural world in every detail. Populus was created by Urban Villages, designed by AD100 architecture firm Studio Gang and led by MacArthur Fellow Jeanne Gang, brought to life by interior designer, Heather Wildman of Wildman Chalmer Designs, with a thoughtful art program curated by environmentalist Katherine Homes, and operated by Aparium Hotel Group.
