Job Description: Sous Chef-Italian Fine Dining Restaurant

Position Summary

We are seeking a talented and passionate Sous Chef to join our “Fine Dining” culinary team at our Angelina's Italian Restaurant. The ideal candidate will have a strong background in Sous Chef role. This position supports the Director of Culinary in overseeing daily kitchen operations, ensuring high standards of food quality, consistency, safety and sanitation, and team performance. This role is responsible for supervising kitchen staff, assisting with menu execution, maintaining compliance with food and workplace safety regulations, and contributing to a positive and efficient work environment. Ensuring that all Pizzas meet our Angelina’s high standards.

Duties

  • Assist the Director of Culinary in managing all of Angelina's kitchen operations, including prep, line, and service execution
  • Supervise and coordinate kitchen staff to ensure efficient workflow and high-quality food production
  • Maintain consistency in food preparation, portioning, and presentation according to restaurant standards
  • Ensure compliance with all food safety and sanitation standards (including local Health Department regulations and California Department of Public Health guidelines)
  • Monitor inventory levels and assist with ordering, receiving, and proper storage of food and supplies
  • Train, coach, and mentor kitchen staff; assist with onboarding and performance feedback
  • Enforce workplace safety standards and proper use of equipment
  • Assist with scheduling and labor management to meet operational needs
  • Support menu development, specials, and seasonal offerings as directed
  • Ensure cleanliness and organization of all kitchen areas
  • Step in to lead the kitchen in the absence of the Director of Culinary
  • Prepare and bake a variety of Pizzas and according to established recipes and standards
  • Collaborate with the kitchen team to plan menus and create new creations
  • Maintain cleanliness and organization of the pizza station, adhering to food safety regulations.
  • Assist in inventory management, including ordering supplies as needed for food production.
  • Provide excellent customer service when interacting with clients or guests regarding pastry selections.

Skills

  • Proficient in pizza techniques and preparation. 
  • Proficient as a Pastry Cook and event specialties on authentic Italian recipes
  • Knowledgeable in Italian salumis and formaggis 
  • Knowledge of food safety practices in a kitchen environment.
  • Ability to work efficiently in a fast-paced kitchen setting while maintaining high-quality standards.
  • Excellent communication skills for effective collaboration within the culinary team.
  • Experience in catering is a plus, enhancing the ability to meet diverse customer needs.
  • Experience in Italian Pizzas is a plus. Experience as a Pastry Cook is a plus.

Qualifications

  • Minimum 2–3 years of supervisory kitchen experience in a full-service or fine dining environment
  • Strong knowledge of culinary techniques, food safety, and kitchen operations
  • Valid Food Handler Card and Food Protection Manager Certification (or ability to obtain within required timeframe)
  • Ability to work in a fast-paced, high-pressure environment
  • Strong leadership, communication, and organizational skills
  • Availability to work evenings, weekends, and holidays

Physical Requirements

  • Ability to stand and walk for extended periods (up to 8+ hours per shift)
  • Ability to lift and carry up to 50 pounds
  • Frequent bending, reaching, and repetitive motions
  • Ability to work in hot, cold, and noisy kitchen environments

Work Environment

This role operates in a commercial kitchen environment with exposure to heat, sharp tools, and high activity levels. Strict adherence to safety and sanitation procedures is always required.
