The opportunity

Patina Group, a division of Delaware North, is seeking a Wine Director to join the team at Monsieur Dior by Dominique Crenn in Beverly Hills, California. A collaboration between the House of Dior and world-renowned chef Dominique Crenn, Monsieur Dior offers a one-of-a-kind dining experience where fashion, creativity, and culinary excellence converge.

As Wine Director, you will lead the vision and growth of the wine program, partnering closely with the Bar Director to deliver an exceptional guest experience. You will oversee wine strategy, events, and financial performance while serving as a steward of a distinctive luxury partnership to help shape the continued evolution of the wine program.

The ideal candidate is an accomplished wine professional with strong leadership and hospitality expertise, preferably gained in Michelin-starred or chef-driven restaurant environments. A commitment to exceptional service, wine education, and operational excellence is essential.

Pay

Minimum – Anticipated Maximum Base Salary: $70,304 – $111,300 / year

In addition to base salary, we offer an annual bonus plan based on company and individual performance, or a role-based, uncapped sales incentive plan. The advertised pay range represents what we believe at the time of this job posting, that we would be willing to pay for this position. Only in special circumstances, where a candidate has education, training, or experience that far exceeds the requirements for the position, would we consider paying higher than the stated range. What will you do?

  • Administration of all wine-related functions to ensure guest satisfaction
  • Preparation of weekly schedules and scheduling appropriate staff according to business levels and planned payroll
  • Assist in maintaining the planned wine cost of sales and assist in the restaurant’s planned cost of sales
  • Hire, train and manage an effective service team, providing feedback and alignment with Delaware North programs such as GreenPath and other service standards
  • Complete all purchasing in compliance with company programs and policies
  • Communicate and assist other team members and departments when needed
  • Provide a safe work environment by following all safety and security policies and procedures
  • Attend and participate in meetings, committees, and training
  • Research and develop new policies, procedures, menus, and control policies that elevate service standards and accountability of staff
  • Coordinate alcohol compliance and quality standards, handle guest relations, and monitor adherence to quality assurance standards

More about you

  • Minimum of three years’ experience and previous experience supervising service team members in a restaurant with a similar style of dining, volume, capacity, and standard of service required
  • Strong wine knowledge, with a Sommelier Level 2 certification or higher from either the Court of Master Sommeliers or WSET
  • ServSafe, Food Safety Handler, and Responsible Beverage Service (RBS) certifications 
  • Experience working with and understanding P&Ls; able to monitor budgets, and manage service and labor costs
  • Experience using Microsoft Office Suite programs, point-of-sale systems, online or digital reservation systems
  • Ability to work flexible hours, including nights, weekends, and holidays in addition to normal business hours, as needed
  • No degree required
