Chef de Cuisine – Terrain Restaurant at The Clayfield, part of the Unbound Collection by Hyatt
Location: Niagara-on-the-Lake, Ontario
Opening: Summer 2026
The Clayfield is a new 102-room luxury boutique hotel opening in Niagara-on-the-Lake and part of the Unbound Collection by Hyatt. The hotel will deliver a highly personalized, refined guest experience grounded in calm luxury, craftsmanship, and a strong sense of place, with dining and gathering playing a central role in that vision.
The Clayfield has partnered with Ascari Hospitality Group for all food & beverage operations including Terrain Restaurant, lobby lounge, Terrace, in-room dining, banquets, and off-site catering.
Ascari Hospitality Group is seeking a Chef de Cuisine. Reporting to the Executive Chef, this role is responsible for the overall leadership, operation and performance of all food production and execution for Terrain restaurant, including in-room dining.

Position Summary
We are seeking a passionate and creative Chef de Cuisine to lead our Terrain kitchen team. Reporting to the Executive Chef, you will be responsible for daily operations, (breakfast, lunch and dinner offered daily as well as in-room dining). The CDC will be part of the leadership team creating seasonal menus, managing food and labour costs, and ensuring exceptional food quality in a luxury hotel environment.
Key Responsibilities
Menu Development: Create innovative, seasonal menus utilizing local Niagara produce and wine country flavours working in daily collaboration with the Executive Chef.
Operations Leadership: Manage day-to-day kitchen operations, including opening/closing duties, prep lists, inventory and cost control, cleaning schedules and recipe creation. Set clear expectations for service, execution, and accountability across all F&B departments.
Team Leadership: Train, mentor, and lead culinary staff to ensure top-tier consistency and high standards of sanitation and safety. Foster a culture of hospitality that is warm, professional, and aligned with Ascari’s values. Establish clear communication across teams to ensure alignment and accountability.
Guest Experience: Deliver superior food quality that aligns with an elevated casual fine dining experience that impresses seasoned travelers at the same time as being welcoming and familiar to local clientele. Maintain a strong, visible presence during key service periods and events.
Requirements
7-10+ years of progressive, fine-dining cooking experience in leadership roles
Current Food Handler’s Certificate.
Strong leadership skills and the ability to work under pressure.
Previous experience in a hotel setting is an asset.
