Job Description

The purpose of the position of kitchen steward is to serve wash dishes, maintain kitchen cleanliness and assist the team with kitchen operations.


Primary Responsibilities:

Duties are as follows but not limited to:

  • Operate all kitchen cleaning equipment
  • Wash dishes and glassware, by hand if necessary
  • Restock all supplies
  • Keep kitchen area clean and free of debris and water.
  • Stock any deliveries received in a timely and safe manner
  • Remove trash and all debris from restaurant routinely
  • Assist other restaurant personnel with tasks when necessary
  • Perform other duties as assigned.
  • Cleans pots, pans, cookware utensils, china, glass, silverware, and any other miscellaneous items 
  • Conduct a quarterly silver and china inventory 
  • Able to work in multiple outlets when needed
  • Keeps cookware washing area clean and neat 
  • Stores cleaned items in the proper location 
  • Keeps kitchen floor area clean and free of debris 
  • Clean any heart of house areas as instructed 
  • Completes other duties as assigned 
  • Help banquet on events 
  • Help breakfast bussing tables and replenishing 
  • Help with overall F&B Operations 
  • Set up work station as required to include filling dish machine, checking chemical levels, presoaking, and gathering required set-up equipment for appropriate work stations. Replenish as needed for all shifts. Rinse/scrape all dishes. Operate dishwashing machine to manufacturer specifications and instructions. Place clean dishes in assigned storage location. 
  • Clean designated equipment, such as hoods, filters, steam tables, bus tables, carts, ovens and grills, sinks, refrigerator/freezers, service areas, walls, floors, cafeteria, dumpster area as assigned. Use and dispose of kitchen substances (such as grease) and kitchen chemicals properly. 
  • Check the working condition of equipment and machinery in accordance with specifications. Inform supervisor of hazardous situations, emergencies or threats to the security of guests, employees or hotel assets. 
  • Empty and clean trash cans when they become full; transport garbage containers from kitchen and work areas to dump sites; adhere to recycling regulations. 
  • Set up and monitor the pot sink according to procedures. 
  • Sweep and mop kitchen floor at the end of each meal period and after each spill. 
  • Monitor chemicals and water temperature during shift. Clean and organize associated work area and kitchen equipment according to procedures to maximize efficiency. 
  • Promote teamwork and quality service through daily communication and coordination with other departments. Key departmental contacts include Catering, Banquets, Outlets, and Maintenance. 
  • May assist with other duties as assigned.


Job Requirements:

  • Position requires effective communication with departments and team.
  • Ability to present and conduct oneself professionally 
  • Three to six months related experience and or training.
  • Minimum knowledge, previous experience not required
  • Flexible schedule required, to include AM/PM, weekends and holidays

TECHNICAL EXPERIENCE:

Must have exceptionally high sanitation standards

Must complete Food Handlers Certification.

Must have knowledge of food and beverage preparations, service standards, guest relations and etiquette.

Knowledge of appropriate cleaning, sanitation and BOH standards

Must have the ability to read, speak and write the English language in order to communicate with guests.

Must have exceptional Guest Relations Skills.


PHYSICAL, MENTAL & ENVIRONMENTAL DEMANDS:

  • Physically mobile with reasonable accommodations.
  • Must be able to lift and carry upwards to 25 to 50 pounds.
  • Must be able to bend, reach, kneel, twist and grip items while working in assigned area.
  • Manual dexterity and coordination to perform all job duties including lifting of trays, cases of food, etc.
  • Read, write, speak, and understand English.
  • Operate in mentally and physically stressful situations.
  • Respond to visual and aural cues.
  • Work in cold & hot temperatures and multiple outlets
