Sous Chef

Description

Renaissance Raleigh Hotel is looking for a Sous Chef that is ready to run the kitchen! The best kitchens are built on respect, and relentless goal of excellence.

WHAT YOU WILL BE OWNING

1. Train and mentor all kitchen line associates with plate presentation, and skill they need to grow in their role.
2. Evaluate performance and direct your team with confidence.
3. Keep communication flowing between Kitchen Management and kitchen associates.
4. Take immediate ownership of problems as they arise-no waiting, no hand-offs mentality.
5. Ensure every plate is high quality, recipe-true, and expedited smoothly to all outlets.
6. Supervise the kitchen in the absence of Executive Chef's.
7. Maintain food temperatures records
8. Help set goals and standards that build the hotel's prestige and profitability.

YOUR BACKGROUND

1. Hotel kitchen experience is a plus as you must understand the pace, volume, and multi-outlet demands of a hospitality kitchen environment.
2. Proven culinary skills across a range of techniques, with a strong command of recipe adherence and food quality standards.
3. Experience leading and devloping a kitchen team.
4. Deep knowledge of food safety, sanitation standards, and health code compliance.
