Job Description Sommelier

Job Summary

Summary/Objective

The Sommelier manages the daily activities necessary for maintenance and promotion of the organization's wine collection. Identifies and purchases wines for the organization. Monitors the conditions of the wine cellar, ensuring optimal storage. Works with the kitchen staff to develop food and wine pairings. Recommends and serves wine to guests.

Essential Functions

  • Create and update the wine lists of each location.
  • Create pars and order guides.
  • Take advantage of wine deals to increase bottom lines.
  • Recommend food and wine pairings.
  • Advise guests on wines based on their personal tastes and food choices.
  • Inform guests about different varieties of wines and prices.
  • Negotiate purchase prices with vendors yearly.
  • Organize wine events.
  • Comply with alcohol laws.
  • Comply with all health and safety regulations.
  • Assuring that inventory is done weekly.
  • Assist with and help create wine training material, specs., checklists, etc.
  • Assist with the maintenance and updating of all company wine training materials.
  • Train wait staff on available wines.
  • Ensure wines are served at the right temperature and within the proper glassware.
  • Store open bottles properly to maintain proper characteristics.
  • Assist the bar manager with the wine cellars and ensure inventory is fully stocked.
  • Ensure each bar maintains a proper inventory of wine glasses, carafes, decanters, ice buckets…

Qualifications

  • Experience with Purchasing, Storing, Sanitation, and Inventory Practices and Procedures
  • Experience with developing and implementing successful training policies and procedures.
  • Knowledge of Restaurant Safety and Sanitation
  • Serv-Safe Certification
  • Experience with Inventory Control Procedures
  • Experience with Cost of Goods Sold control
  • Basic labor laws and human resources practices
  • Proficient Math Skills
  • Outstanding skills in leadership, interpersonal communication, and staff development
  • Demonstrate honesty, loyalty, integrity, and hard work.
  • Excellent communication skills both written and verbal.
  • Exceptional organizational skills to manage an operation with many moving parts.
  • Proficient at Microsoft Excel
  • Proficient at Microsoft Word
  • Proficient at POS Systems
  • Ability to drive sales and guest service initiatives by motivating team members.
  • Experience in Front of House operations while promoting superior service and guest hospitality.
  • Ability to work calmly and effectively under pressure.
  • Must strive to be an industry and market leader.
  • Self-motivated, organized, and ability to problem solve.
  • Experience on creating wine lists.
  • Extensive knowledge in Italian wines
  • Level 1 Sommelier

Preferred Education and Experience

  • Level 2 Sommelier court of master or Wset level3
  • AIS certification level 2

Physical Demands

The employee is occasionally required to sit; climb or balance; and stoop, kneel, crouch or crawl. The employee must frequently lift or move objects up to 10 pounds and occasionally lift or move objects up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.

Position Type/Expected Hours of Work

This position is full-time and regularly requires long work hours, nights, weekend, and holidays.

Travel

Some travel is expected for this position.

Work Environment:
This position takes place in a vibrant upscale restaurant environment, with the Mercato serving as the focal point upon entry. Team members will work in a dynamic café located within our elegant restaurant.

Expected Hours of Work:
This position works up to 50 hours a week, regularly requires evening, weekend, and holiday shifts to meet customer demand.
